6-4 dinner

This was not pretty but it was very tasty!
Lentils and rice
1/2 cup carrots/celery/onions
1 tsp olive oil
1 cup brown rice
1/2 cup lentils
3 cups vegetable broth

Brown veggies in olive oil.  Add broth and bring to a boil.  Add rice and lentils.  Cook on low for 40 min. 

I had 1 1/4 cup.
